Recipe: Grilled Avocado

I made this recipe for dinner tonight and It was so delicious, I just had to share!! My adjustments.. Lemon juice instead of lime {it’s what I had}, some cheese under the fresh salsa.. No sour cream. Please feel free to follow my fitness Instagram @JeniP_Fitspiration! Enjoy!

Grilled Guacamole
-several firm, yet ripe avocados
-pico de gallo or your favorite salsa
-limes
-olive oil
-sea salt
-sour cream or yogurt
Cut the avocados in half and remove the pit. (for an easy video on how to do that, check out my video at loveandtomatoes.com). Brush each avocado half with olive oil and lime juice. Place it green-side down on the grill for 5-7 minutes. Sprinkle it with sea salt and some additional lime juice. Fill the hole with pico de gallo and a dallop of sour cream. Serve with a side of tortilla chips.

I hope you enjoy this simple & healthy recipe! I plan to skip the sour cream on mine.. I’m sure this simple recipe can be altered to everyone’s own specific taste. Have a great Sunday & thanks for reading!

Fitness & Coffee

A few weeks ago, my husband bought us a treadmill. BEST ❤ HUBBY ❤ EVER & not just because he buys great things… he truly is the best. I absolutely LOVE that i can workout now! I haven’t been able to in so long because when I try, the babies get mad or try to climb all over me while on the floor trying to focus on a workout video.. haha… which obviously makes me quit working out and just play with them. The treadmill is in the room next to our living room, so while they eat lunch or even just play and watch cartoons… this mommy can WORK OUT! It feels so nice. I used to work out daily before I had babies & after our first, I got down to the last 10 lbs and found out we were pregnant again… I was paranoid and didn’t do anything fitness related while pregnant except walking once in a while. I had a lot of pain during my second pregnancy so it seemed like every little thing I did, took everything out of me.

So far, I have been able to start eating better again also.. I am restricting my calories some but mainly cutting out a lot of the carbohydrates I was eating and replacing them with fruits & veggies. For my work outs, I do some pilates & then walk with a high incline on the treadmill for 30 minutes a day. It isn’t much, but it is something…. and everyone starts somewhere. In addition to working out and eating better… I have managed to cut coffee completely out of my life except for maybe Starbucks once a month. I love it, so I need it sometimes… AND i get decaf now.. which is just nuts. If you know me, you know I was a coffee addict. I needed atLEAST a half of a pot a day to function. Now that I am no longer drinking it though, its strange to say but i actually feel MORE alert and energized most days except for the usual “mommy didn’t sleep last night” days. We all have those though!
